Chole is generally cooked in three stages. The first part involves the Chickpeas to be boiled in water. The next stage involves making the gravy. We’d need prepare the gravy of the recipe. The pre-boiled chickpeas are then added to the gravy and garnished with clarified ghee and coriander leaves.

INGREDIENTS
1 cup chickpeas or chole
1 chopped onion
1 chopped green chili
3 chopped tomatoes
1 tbsp ginger-garlic paste
1 tsp Salt ( 1tsp =1 teaspoon, 1tbsp=1 tablespoon, 1tbsp=3tsp )
1 tsp red chili powder ( spice powder )
1 tsp garam masala ( spice powder )
1 tsp coriander powder ( spice powder )
1 tbsp chole masala ( spice powder )
1 inch cinnamon ( whole spices )
3 cloves ( whole spices )
3 cardamon ( whole spices )
1 bay leaf ( whole spices )
1 tsp ghee ( for garnish )
few coriander leaves ( for garnish )
INSTRUCTIONS

Soak the chickpeas in water and soak them overnight or soak them for 6-8 hours.

Drain the water and pressure cook the chickpeas. Keep it separate.

Heat oil in a hot pan. Add cinnamon, clove, cardamon, bay leaves.

Add ginger-garlic paste

Add chopped onions, green chilies and heat them until onions turn golden brown.

Now add tomatoes and cook until the mixture becomes soft.

Now add masala ( garam masala, red chili powder, turmeric powder, coriander powder )

Stir fry for sometime until masala flavor comes out. ( Gravy is ready )

Now add the pressure cooked chole along with 1-2 cup water

Cover and simmer in low flame for around 20 minutes.

Add 1 tsp of ghee and coriander leaves to garnish

Serve hot chole with rice, puri or chapati
